Roast Chicken with Spinach stuffing - A Boxing Day Special

Yes I know the last thing you want to hear right now is Roast or anything remotely close to it. So then why am I posting this recipe now. Well it is because I know many of you either had a festive Christmas meal(s) and may not even know what Boxing Day is all about. However there are many others globally who enjoy a public holiday on December 26th, i.e. the day after Christmas and traditionally celebrate Boxing Day. 





So what is Boxing Day - the simple explanation as per modern day practices is a day when all the leftovers of Christmas Day is shared. It may also be a day when those friends or relatives you haven't celebrated and shared the meals of Christmas Day comes over for a meal or two or more. 





After a festive meal or even a Christmas party, it may be that you do not have any leftovers to share, so hence the Roast recipe I am about to share with you. This roast has a healthy element in terms of its stuffing and is no problem at all to cook up as it has a simple marinade and does not require much of visits to stores (which I am sure your feet probably would not allow you to do). 





No need for any close monitoring either. Just pop it into the oven and it is ready to hold center place on your Boxing Day table along with any leftovers or sides.

The marinade is learnt from my darling Mummy and in fact she was with me in Chennai (visiting us in February 2015) when I cooked this last roast with her.

On with the recipe...

What you need:

  • 1500 gms of chicken (skin-on), cleaned well
  • 2 fairly large bunches of spinach, chopped roughly
  • 1 large onion, finely diced
  • Ginger-Garlic paste - 2 tbsp
  • 1 heaped tbsp of Chili powder
  • 1 heaped tbsp of Garam Masala
  • 1 tbsp salt
  • Water to combine the marinade
  • Olive oil

The Make:

Preparation Time: 10 minutes | Marination time: 30 minutes to 2 hours | 

1. Slit the chicken skin across the breast, legs and wings. Make a marinade of the ginger-garlic paste, Chili powder, Garam masala and salt. Rub generously all over the chicken and within the cavity as well. Set aside for 30 minutes up to 2 hours minimum.
2. Meanwhile in a large wok, drizzle some olive oil, saute some onions until lightly brown and then add the spinach leaves. Cook until the residual water disappears or up to 5 minutes. Set aside.
3. Preheat the oven to 180°C.
4. Next stuff the cavity of the chicken and all around the roast with spinach leaves and place on a roasting tray. Loosely cover the chicken with foil paper. Roast for 45 minutes to an hour.

Serve hot with your Christmas day leftovers and sides.

Simple Chicken Roast

Yes, yes it just got simpler! I know that many of you hardworking mums and dads would still be fishing around for recipes to prep for Christmas lunch or dinner.







And there are some of you who are spending a quieter Christmas time owing to loss in the family or friends. You got to eat though right?



*This was before I learnt to bake breads ;) *Store bought* And also keeping it simple and just making a roast and a simple green salad. PS I still buy a lot of breads :D



So may be you don't feel in the festive mood this time and do the whole Christmas party /decorations shebang. This may help you make that simple roast for the family to sit down, reminisce over good times of old and remember your loved ones in prayer and good thoughts.






Not much more to say other than, this recipe is simple and straightforward and so I won't go on. Just diving right into this recipe.





What you need:

  • 1200 gms chicken (skin-on) and cleaned
  • Salt and Pepper to taste
  • EVOO (Extra Virgin olive oil)
  • Dried Parsley leaves


The Make:
Prep Time: 10 minutes | Roasting Time: 1 hour | Serves 4-5 adults

1. In a small mixing bowl, mix some EVOO, salt, pepper and parsley.
2. Marinate the chicken all over with the EVOO mix.
3. Place the chicken over a wire rack with a roasting tray below it to hold the juices and pop it into the oven at 180°C.
4. Roast for up to an hour. Occasionally baste the chicken with an oil brush from the juices dripping into the pan. You can baste the chicken at the 20 minute, 40 minute mark and then just before turning off the oven.

Rest the chicken before carving into it.

Jamie's Oozy Beans with Spinach

This recipe is long overdue and as I had mentioned my last blog post on Chicken Masala Roast with Soya Sauce, I will be sharing roasts as we get into the holiday season of Thanksgiving, Christmas and New Year to help you prepare your celebratory meal. This is a perfect side to your Roast. I had served this with Jamie Oliver's Perfect Pork Loin with Crackling. Of course Jamie's Oozy Beans were Borlotti Beans (aka Cranberry beans) served with Agretti. Since Agretti was unavailable, I substituted with Spinach and Parsley. Also since I had no idea of where to get Borlotti Beans from or if they were even available in the local market, I substituted it with black-eyed beans or black-eyed peas which in some cultures are served within a New Year meal as it is supposed to ward of evil eyes. As noticed above, I have also substituted a couple of ingredients owing to the fact that it was no available in the local market.





This has to be the most simple side dish you can prepare to go with your elaborate main course and it is incredibly healthy. 
















You need:
  • 1 small potato, cut in half
  • 1 large tomato
  • Water as required
  • 3 cups of black-eyed peas/ black-eyed beans
  • Bouquet of garni (as Jamie calls it - thyme, bay and sage leaves tied together. I used dried sage instead)
  • Pinch of Soda Bicarbonate
  • 6 tbsp + 1 drizzle of EVOO (Extra Virgin Olive Oil)
  • Pinch of salt
  • 1 tsp white vinegar
  • 1 bunch of parsley, few basil leaves, chives, thyme leaves (as available), finely chopped
  • 1 bunch of spinach, cleaned and chopped


The Make
Preparation time: 10 minutes | Soaking Time: 4 hours min | Cooking Time: up to 1 hour | Serves 4-5 adults

1. If you were using dry Borlotti Beans then you could soak it overnight in  a large pot with the beans covering only 1/4 of the pot and the rest covered with water and a pinch of soda bicarb. Then discard the water. In my case, since I was using the smaller black eyed peas, I soaked mine for 4-5 hours only.
2. In a large pot add the beans, herb bouquet, potato and tomato in full. Fill the pot up with water (twice as much as the beans).
3. Bring the beans to a gentle simmer for 50-60 minutes. When it is about to boil, turn down the flame. Resist the urge to cook these beans in a pressure cooker as the turn out would be different and so would the taste.
4. Next take out the potatoes, the herb bouquet, squish some of the tomato pulp with the back of a ladle into the pot and take the tomato out.
5. Next pour out 80% of the residual liquid from the pot into a bowl. Mash up the cooked potato halves and put some of it back to the pot to add a creamy texture.
6. Add the olive oil in the pot with the salt and vinegar and toss it over in the pot taking care not to mash the beans. Add one more drizzle of EVOO on top.
7. Add the chopped herbs and toss once more.
8. Cook the chopped spinach in salted, boiling water in another pot for 2 minutes and then drain it out and toss it in the roasting pan of your cooked choice of roast as if cleaning the roasting pan with it.
9. Add a bit of the reserved residual liquid from the pot which was set aside earlier to the beans pot and toss. Taste and add more EVOO and vinegar if required.
10. Serve the beans on a flat serving tray and top with the spinach tossed in the roasting juices. Then pour any residual juice from the roasting pan on top. Top with a slice of the pork loin or your roast and pour some of the roast's prepared gravy on top.

Jamie added a very important tip for those who hate beans for the obvious breaking wind ;) add Summer Savoury herbs. I checked it is available as an online buy on Ebay here. You can also add a few cloves of chopped garlic when cooking the beans.

Serve these Oozy beans with your favourite roast or Jamie's Perfect Pork Loin with Crackling.

Lemon and Herb Roast Chicken

I am baaaack. Didn't expect me so soon did you :)? Well I am here and this time again with another super simple recipe.

Although I specify two herbs, you can add more or different herbs as well. I tried this combination and I have to say I am quite inspired with this experiment.

This chicken borrows more of a Mediterranean flavour. Herbes de Provence, a mixture of several dried herbs such as thyme, oregano, rosemary, marjoram and savoury, is typical of the Provence region of South East France. Oregano is common in the Mediterranean region.



You need:


  • 1.2 kgs of whole chicken with skin on, washed and cleaned well
  • Salt to taste
  • Half a shake of Herbes de Provence
  • A good shake of Oregano
  • 1 tbsp Pepper powder
  • A drizzle of olive oil
  • 1/2 a lemon
  • 2 drops of clove oil (you just have about 3-4 cloves sitting in some warm oil for about half a day, strain and use) - optional *
* You can also use biriyani oil in case available.





The Make:
Preparation time: 10 minutes | Roast time: 1 hour | Resting time: 10 minutes | Serves 3-4 adults

1. Preheat the oven to 180°C. Form slits all around the chicken with a sharp knife edge and allow the cleaned chicken to drain in a colander.
2. In a bowl, mix the herbs, pepper, olive oil and salt to taste.
3, Rub into the chicken well, taking care to tuck in some of the spice rub into the slits on the chicken and some in the cavity as well.
4. Squeeze the lemon juice over the spice rub and massage the chicken once more.
5. In a large roasting pan, lay the spice rubbed chicken carefully and pop it into the oven.
6. Roast until golden brown on top and the chicken is cooked well for about an hour.
7. Rest in the oven for about five minutes and then remove from the oven and rest for five more minutes.

Serve hot with a side of your favourite salad and choice of bread.
